I have this great way of sneaking veggies into our meals. Not because R is picky. We bribe her with veggies to eat her meat and potatoes ("R, if you finish your chicken, you can have your broccoli!" Kinda feels like the Twilight Zone, doesn't it?) But Daddy and I have never been very creative vegetable eaters. Peas (frozen only, none of that canned junk), corn, green beans. That's about it. The occasional broccoli and carrots in a stir fry. Anyways, I love
Deceptively Delicious, and it's in the spirit of that book that I've made this recipe. I think I combined a few recipes to make this, but I've been making it so long, I honestly don't remember. Here you go, a high fiber, lower fat version of that ubiquitous dip every kid (and adult) loves. We put it on sandwiches every day. Makes me feel good that there's a little more nutrition on it than just flavor.
Sneaky Ranch Dressing / Dip
1 can navy beans
8 oz sour cream (light or regular, you may want to start with regular to make it taste more "normal")
1 package ranch dressing mix
Blend it in a blender until it's really smooth, it will be gritty for a bit, just keep going. Put it in a ranch dressing bottle so no one gets suspicious.
The color is a little off, but it's not so off that it would arouse suspicion. It's passed the kid test, we had friends over and the kiddos ate it up. And I don't feel bad pouring it on like Subway does because it's (gasp!) mildly healthy! Hope this helps any of you with picky kids (or husbands)!
I'll definitely have to try it!!! Ava will only eat meat if she can dip it in ranch. However, she'll eat her (raw) veggies up like candy - no ranch needed. How funny!
